A traditional term meaning 'feminine sake,' describing the soft, gentle, elegant style historically associated with Fushimi, Kyoto. Onna-zake is shaped by very soft water that produces mild fermentation and refined, delicate sake.

Fushimi's water is drawn from underground sources fed by three rivers, producing naturally soft water with low mineral content. This soft water results in slower, gentler fermentation that preserves delicate flavors and produces sake with a round, smooth character. The contrast between Fushimi's onna-zake and Nada's otoko-zake is one of the most fundamental regional distinctions in Japanese sake. While the gendered language is debated, the stylistic difference is real and rooted in water chemistry. Major Fushimi producers include Gekkeikan, Kizakura, and Sho Chiku Bai.
