Fushimi's water is drawn from underground sources fed by three rivers, producing naturally soft water with low mineral content. This soft water results in slower, gentler fermentation that preserves delicate flavors and produces sake with a round, smooth character. The contrast between Fushimi's onna-zake and Nada's otoko-zake is one of the most fundamental regional distinctions in Japanese sake.
