Nara sits in an inland basin surrounded by mountains, including the ancient Yoshino range renowned for exceptionally pure, soft spring water that inspired sake brewing over 600 years ago. The basin experiences cold winters with frost but relatively little snowfall, creating moderately cool fermentation conditions. Humid summers support ki-moto and yamahai lactic acid starter cultures, connecting modern Nara brewing to its monastic origins at Shoryakuji temple.

Nara is the birthplace of modern sake brewing. The monks of Shoryakuji temple in the 15th century developed pasteurization, polished rice techniques, and the multi-parallel fermentation process still used today. Despite this heritage, Nara's sake industry is small but fiercely proud. Pure water from the Yoshino mountains supports a refined, elegant brewing style.
