Made by the kimoto method — the oldest traditional sake starter, in which lactic acid develops naturally through hand-pounding of the mash — Akishika Junmai Kimoto is brewed by Akishika Shuzo in Osaka Prefecture from Yamada Nishiki milled to 70%. The technique yields the sake's high acidity of 1.8 and rich amino-acid level of 1.7, producing a bold, savory, structured body. A Sake Meter Value of +3 at 15% alcohol keeps it dry. Akishika is known for uncompromising, food-focused kimoto and yamahai brewing.
