About

Kokuryu (Black Dragon) in Eiheiji, Fukui — on the Ishikawa border — is a pioneer of premium ginjo sake and aged sake (koshu). Their Shizuku (Drip) Daiginjo, pressed by gravity alone, set the standard for ultra-premium sake in the 1970s. The brewery also led koshu experimentation, proving that sake could age gracefully for years.
