Ryu, meaning Dragon, is Kokuryu's core Junmai Ginjo and a common introduction to the prestigious Fukui brewery. It is clean and balanced, with gentle fruit aromatics and a dry finish oriented toward food. Made from Gohyakumangoku polished to 55%, it reaches 15.5% ABV with a sake meter value of +4 and a low acidity of 1.25. Its flavor draws on fruit, floral, and rice notes over a dry structure. Within the Kokuryu hierarchy it sits below the brewery's Daiginjo bottlings, such as the gravity-pressed Shizuku and the assertive Ippaku Suisei. The Black Dragon brand has been associated with quality since the 1970s, when the brewery helped pioneer premium ginjo in the Hokuriku region.
