Kidoizumi in Isumi, Chiba is a pioneer of natural sake and vintage aging. The brewery's high-temperature yamahai method, developed in the 1950s, creates robust starter cultures without commercial lactic acid. Their AFS (Aged Fermented Sake) series includes remarkable decades-old vintages. Kidoizumi helped inspire the modern natural wine movement's interest in sake.
