The throat feel or swallowing sensation of sake. Good nodogoshi means the sake passes smoothly down the throat without harshness, heat, or catching — a quality prized in Japanese beverage evaluation across sake, beer, and water.

Nodogoshi literally translates as 'passing through the throat' and is a distinctly Japanese tasting concept that has no direct equivalent in Western wine vocabulary. Smooth nodogoshi suggests well-integrated alcohol, balanced acidity, and absence of rough tannin-like compounds. Harsh nodogoshi may indicate excessive fusel alcohol, unbalanced acidity, or poor fermentation management. The Japanese emphasis on nodogoshi reflects a cultural preference for beverages that facilitate eating — smooth swallowing encourages pairing sake with food throughout a meal.
