Definition
The master brewer who leads sake production at a kura. Historically, toji were seasonal workers from specific regions, each following a distinct brewing school (ryuuha) with proprietary techniques passed through apprenticeship.

The major toji guilds include Nanbu (from Iwate), Echigo (from Niigata), Tanba (from Hyogo), Noto (from Ishikawa), and Hiroshima. Each school developed particular approaches to koji making, fermentation management, and flavor goals. While the guild system has declined as younger, year-round employees replace seasonal toji, the title remains prestigious. Today many brewery owners serve as their own toji, and a new generation of university-trained brewers brings scientific rigor to traditional craft.
