The middle tier of Asahi Shuzo's Dassai range, Dassai 39 is polished to 39% and offers more body and rice character than the more heavily milled 23 while retaining a comparable elegance. Made from Yamada Nishiki in Yamaguchi, this Junmai Daiginjo reaches 16% ABV with a sake meter value of +4 and a low acidity of 1.15. Aromas of melon and banana accompany a gentle sweetness and a medium-length finish. Positioned between the entry 45 and the flagship 23, it is often regarded as an approachable point of entry into the Dassai style and one of the better-value expressions in the premium daiginjo category.
