Isojiman (Pride of the Shore) in Yaizu is regarded as one of Shizuoka's finest breweries and a national ginjo benchmark. Using the prefectural HD-1 yeast and Mt. Fuji aquifer water, the brewery produces impeccably clean, elegant sakes with precise aromatics. Their Junmai Daiginjo Naka-Dare (middle-run) is among Japan's most celebrated bottlings.
