Zuiyo (Auspicious Hawk) in Kumamoto city is the brewery most closely associated with the development of Kumamoto Yeast (Kyokai No. 9), one of the most important ginjo yeasts in sake history. Using Mt. Aso's volcanic groundwater and the yeast born in this region, Zuiyo produces aromatic, rich sakes that demonstrate why Kumamoto earned its place in brewing history.
