Clima
Saga Prefecture in northern Kyushu enjoys a humid subtropical climate with mild winters that challenge brewers relying on natural cold. Rich alluvial plains produce exceptional Yamada Nishiki rice, and groundwater filtered through the Sefuri mountain granite has moderate mineral content suitable for balanced fermentation. Despite warmer temperatures, the Kashima brewing district leverages careful thermal management to achieve premium results.
