Named after the iconic red cow (akabeko) folk toy of Aizu, this Yanaizu brewery produces characterful sakes rooted in the mountain traditions of western Fukushima. Pure water from the Tadami River basin and a dedication to local rice varieties create robust, honest sakes with depth and warmth suited to the cold Aizu winters.
