Takasago Shuzo in Asahikawa is famous for its Kokushi Musou (Unrivaled in the Nation) brand. The brewery pioneered ice-dome brewing, fermenting sake inside igloos made from compacted snow at -10C. This extreme cold fermentation produces remarkably clean, crisp sakes with delicate aromatics. Hokkaido's Ginpu rice and Daisetsuzan water complete the northern terroir.
