Climat

Kyoto's Fushimi district enjoys a mild basin climate moderated by surrounding mountains, with cool winters ideal for slow fermentation. The soft, gently mineral Fushimi water — drawn from the same underground streams that feed centuries of tea ceremony tradition — imparts a delicate, rounded character to sake. Humid summers support koji mold cultivation.

The Fushimi district in Kyoto is one of Japan's oldest and most celebrated brewing regions, famed for its soft, medium-mineral water that produces gentle, rounded sakes described as onna-zake (feminine sake). Centuries of imperial patronage shaped a refined brewing tradition. Gekkeikan and Kizakura remain among Japan's largest producers.
