Aramasa Colors Cosmos

Aramasa Colors Cosmos belongs to the Aramasa Sake Brewery's Colors series, in which each expression isolates a single rice variety while holding the other brewing variables constant; Cosmos features Miyama Nishiki. Made in Akita as a Junmai polished to 50%, it is bottled at a comparatively low 14% ABV. A sake meter value of −5 places it on the sweet side of the spectrum, offset by an unusually high acidity of 1.75 that lends a lively, slightly effervescent quality on the palate. Its flavor leans toward rice and lactic notes alongside gentle fruit. Because the series fixes every parameter except the grain, it functions in part as a demonstration of how rice variety alone reshapes a finished sake's profile.
