Description
This special expression is matured in Hakkaisan's snow cellar (yukimuro), where compacted snow maintains a constant temperature of 3C year-round. The gentle, natural cold aging rounds the sake's character over three years, developing a mellow, honeyed complexity impossible to achieve with conventional refrigeration. A unique expression of Niigata's snow culture.
