Moderate fruity and floral notes sit atop a rice-inflected body, with an acidity of 1.3 and an amino-acid level of 1.15. A Sake Meter Value of +3 at 15.5% alcohol gives a dry, clean finish. Hiroshima is historically significant as a cradle of soft-water ginjo brewing, and Suishin ranks among its long-running breweries.
Description
Suishin's Junmai Ginjo uses local Hattan Nishiki rice and Hiroshima's famous soft water to create a gentle, approachable sake with subtle fruit aromatics and a soft, rounded finish. The brewery beloved by painter Yokoyama Taikan continues to produce sakes that embody Hiroshima's characteristic delicacy and elegance.
