Kagoshima at the southern tip of Kyushu is the undisputed capital of imo-shochu (sweet potato spirit), with over 100 shochu distilleries. Sake brewing here is extremely rare — the warm climate and volcanic soil historically made shochu production more practical. Yet a handful of determined breweries maintain the craft, producing unique sakes that reflect this distinct terroir.
