Kagoshima sits at the extreme southern tip of Kyushu, where the warm Kuroshio Current and Sakurajima volcano create a subtropical climate with mild winters that rarely support traditional cold-season sake fermentation. The volcanic soils produce the sweet potatoes that fuel the prefecture's 100+ shochu distilleries, making conditions far better suited to imo-shochu than nihonshu. The handful of sake breweries that persist here work against formidable climatic odds in Japan's most shochu-dominant region.
