The tanrei karakuchi movement emerged in the 1970s-80s, led by Niigata breweries that promoted a cleaner alternative to the heavier, sweeter styles that previously dominated. Key factors include Niigata's soft snow-melt water, Gohyakumangoku rice, and cold climate that permits naturally low fermentation temperatures. Brands like Kubota, Hakkaisan, and Koshi no Kanbai popularized this style nationally and internationally. While tastes have diversified since, tanrei karakuchi remains a foundational style and many drinkers' introduction to premium sake.
