Polished to 38% and matured at −10°C for three years, Born Tokusen is the flagship of Kato Kichibee Shoten's aged sake range. The extended sub-zero maturation builds pronounced depth, with notes of aged honey, dried pear, and subtle vanilla that read as more concentrated than the brewery's Born Gold. This Junmai Daiginjo is made from Yamada Nishiki, reaches 16% ABV, and carries a sake meter value of +2 with a low acidity of 1.15. Its flavor is strongly fruit- and floral-driven with a measured sweetness. Produced in Fukui, it represents the most refined and long-aged expression in the Born lineup.
