Brewed by Hakutsuru Sake Brewing in Hyogo Prefecture and milled to 73%, it presents rice and dry notes with restrained umami. A dry Sake Meter Value of +5 and a low 13.5% alcohol produce a brisk, refreshing profile, while an acidity of 1.4 and an amino-acid level of 1.3 keep it food-friendly. Hakutsuru is one of the largest sake producers in Hyogo, Japan's principal brewing prefecture.
