Kokuryu Shizuku Daiginjo

Shizuku, meaning Drop, is Kokuryu's ultra-premium gravity-pressed Daiginjo: the fermenting mash is placed in cotton bags and allowed to drip naturally, without mechanical pressing, so that only the most delicate liquid is collected. The method produces an exceptionally refined sake with fine, transparent aromatics. Made from Yamada Nishiki polished to 35%, it reaches 15.5% ABV with a sake meter value of +5, placing it on the dry side, and a very low acidity of 1.1. Its flavor is intensely fruit- and floral-forward with a light sweetness, and its limited output makes it a sought-after bottling among collectors.
