Kato Kichibee Shoten in Sabae, Fukui produces the acclaimed Born brand. The brewery is a pioneer of matured sake, aging their expressions at sub-zero temperatures for extended periods to develop rounded, complex flavors. Born Gold, their flagship Junmai Daiginjo aged at -8C, has become synonymous with premium aged sake in Japan.
