Polished to 23% — meaning 77% of each grain is milled away — Dassai 23 is the flagship of Asahi Shuzo's Yamaguchi range. The extreme polishing removes nearly all protein and fat, leaving mostly starch and yielding an exceptionally clean, delicate sake with notes of white peach, pear, and honeydew over a light, almost weightless texture. This Junmai Daiginjo is made from Yamada Nishiki, reaches 16% ABV, and carries a sake meter value of +4 with a very low acidity of 1.1. Its aromatics are intensely fruity and floral with a restrained sweetness. It is frequently cited as a reference point for the modern, highly polished style of premium sake.
