Developed in Okayama Prefecture and registered in 2005, Gin no Sato is a cross of Yamada Nishiki and Nakate Shinsenbon. It was bred specifically for high-grade ginjo production in warm climates. The rice has excellent shinpaku definition and polishes cleanly to low ratios. Sakes made from Gin no Sato are clean, fragrant, and elegant with refined ginjo-ka.
