Masuizumi's flagship Junmai Daiginjo showcases the Tateyama mountain water of Toyama. Yamada Nishiki polished to 40% yields an elegant, refined sake with melon and white-flower aromatics and a mineral-driven finish. Brewed by Masuda Sake Brewery, it reaches 16.5% ABV with a sake meter value of +4 and a low acidity of 1.2. Its flavor is fruit- and floral-forward with a light sweetness. At 16.5% ABV it sits toward the fuller end of the daiginjo class. The brewery is also known for a vintage koshu aging program, and this flagship ranks among the noted sakes of the Sea of Japan coast, its aromatics carried on the soft mountain water of the Tateyama range.
