Aramasa No. 6 S-type

Aramasa No. 6 S-type is a Junmai Ginjo brewed by Aramasa Sake Brewery in Akita Prefecture, named for association yeast No. 6, which was isolated at this very brewery and remains the oldest sake yeast still in commercial use. Milled to 55%, it shows lactic and fruity character with light sweetness, an off-dry Sake Meter Value of -2, and a high acidity of 1.7. At a restrained 14% alcohol, the profile is fresh and vivid. Aramasa brews exclusively in the additive-free Junmai style using traditional lactic starters.

The entry point to Aramasa's No. 6 series, S-type uses rice polished to 55% and the brewery's signature No. 6 yeast with the kimoto method.
