The Professional Palate
As sake's international profile grows, the demand for qualified sake service professionals has expanded dramatically. The sake sommelier — known in Japan as kikisake-shi (唎酒師) — plays a crucial role in bridging the gap between brewery and consumer.
Kikisake-shi Certification
The Sake Service Institute (SSI) in Japan offers the kikisake-shi certification, the most widely recognized sake service credential. The program covers sake production, classification, tasting methodology, food pairing, service technique, and Japanese food culture. Approximately 40,000 people hold the certification in Japan.
International Programs
The Wine & Spirit Education Trust (WSET) offers sake qualifications at Levels 1 and 3, recognized worldwide. The Sake Education Council (SEC) provides Certified Sake Professional (CSP) certification through intensive multi-day courses. The Court of Master Sommeliers includes sake in its advanced examinations.
Essential Skills
A sake sommelier must master: blind tasting and identification, label reading in Japanese, temperature management, vessel selection, food pairing across cuisines, storage and inventory management, and the ability to communicate sake's story to diverse audiences — from curious beginners to experienced enthusiasts.
The Service Moment
At the table, the sake sommelier's role is to understand the diner's preferences, consider the menu, and recommend sake that enhances the entire meal experience. This requires not just product knowledge but emotional intelligence — reading the occasion, the mood, and the adventurousness of the guests.
A Growing Profession
Sake sommeliers are increasingly visible at fine dining restaurants, hotels, sake bars, and import companies worldwide. The profession offers a rewarding career path combining sensory expertise, cultural knowledge, and hospitality. As global sake consumption grows, demand for qualified professionals will only increase.
