Hyogo is the birthplace of Yamada Nishiki, the undisputed king of sake rice, and home to the Nada district in Kobe — one of Japan's two most historically important brewing regions. Miyamizu mineral-rich hard water from the Rokko mountains produces bold, structured sakes. Major breweries include Hakutsuru, Kiku-Masamune, and Sawanotsuru.
