Hyogo's Nada district benefits from cold winter winds off the Rokko mountains and mineral-rich Miyamizu hard water drawn from deep granite aquifers. This unique water chemistry promotes vigorous yeast activity, producing bold, structured junmai and honjozo styles. The temperate coastal climate supports year-round rice cultivation of premium Yamada Nishiki.

Hyogo is the birthplace of Yamada Nishiki, the undisputed king of sake rice, and home to the Nada district in Kobe — one of Japan's two most historically important brewing regions. Miyamizu mineral-rich hard water from the Rokko mountains produces bold, structured sakes. Major breweries include Hakutsuru, Kiku-Masamune, and Sawanotsuru.
