This Junmai uses Tottori's revived Goriki heritage rice — a tall, difficult-to-grow variety that nearly went extinct. Daisen mountain water and the robust rice produce a full-bodied, characterful sake with deep umami, earthy complexity, and a structured, dry finish. A passionate tribute to agricultural preservation and terroir-driven brewing.
