The grain is polished to 59%, and the finished sake reaches 15.5% ABV with a sake meter value of +3 — placing it on the dry side — and an acidity of 1.55. Its flavor centers on rice, dryness, and a savory umami undertone. The result is a clean, food-oriented Junmai shaped by the cold-climate water and grain of central Japan.
