Hachinohe Shuzo produces the increasingly famous Mutsu Hassen (8000 of Mutsu) brand, which has rapidly risen to cult status for its bright, juicy, and contemporary style. The young toji's modern approach — using local Gin Otome rice and Aomori's pure water — produces fruit-forward, clean sakes that appeal to both traditional enthusiasts and new-wave sake drinkers.
