İklim

Kochi faces the warm Kuroshio Current along Shikoku's Pacific coast, producing a warm, humid climate with plentiful rainfall and mild winters very different from the cold Tohoku heartland. The Shimanto and Niyodo rivers — celebrated for exceptional water clarity and low pollution levels — provide soft, clean brewing water. Despite the warm climate, Kochi brewers produce a distinctively dry style requiring careful temperature management during fermentation.

Hakkında

Kochi Prefecture on Shikoku's Pacific coast is famous for having Japan's highest per-capita sake consumption. The local style is distinctly dry and crisp — tanrei karakuchi rivaling Niigata — designed for the region's tradition of banquet-style drinking games (okyaku). Pure water from the Shimanto and Niyodo rivers and a warm climate create unique brewing conditions.
