Akishika's estate-grown Junmai Kimoto is a tour de force of natural sake. Organically farmed Yamada Nishiki from the brewery's own paddies, kimoto fermentation, and minimal intervention create a richly textured sake with deep umami, lactic tang, and earthy complexity. Beloved by natural wine sommeliers, it bridges the gap between sake and orange wine cultures.
