Tatenokawa Komyo Junmai Daiginjo

Milled to a 1% polishing ratio, Tatenokawa Komyo Junmai Daiginjo is defined by one of the most extreme rice-polishing figures in the sake world, leaving barely a hundredth of each grain. Brewed by Tatenokawa Brewery in Yamagata Prefecture from Dewa Sansan, the milling produces intense fruity and floral aromatics of exceptional purity. A very clean amino-acid level of 0.8 and a soft acidity of 1.05 accompany a Sake Meter Value of +4 at 15% alcohol, giving a dry, weightless finish. The name Komyo, meaning 'radiance,' reflects the brewery's all-Junmai Daiginjo philosophy.

Komyo (Radiance) is polished to an almost incomprehensible 1% — removing 99% of each rice grain. This extreme expression pushes sake to its theoretical limit, producing a transparent, barely-there liquid with gossamer aromatics and an almost spiritual purity. As one of the world's most expensive sakes, Komyo is less a beverage than a philosophical statement.
