Kurosawa in Saku, Nagano is known internationally for their rich, creamy Junmai Kimoto that has become a staple in American sake bars. The brewery draws water from the Yatsugatake mountains and uses traditional kimoto methods to produce sakes with outstanding body, umami depth, and warmth. Their bold style stands in contrast to the lighter alpine sakes common in the region.
