The sake brewing district of Kyoto, famous for its exceptionally soft water (gokusui) that produces gentle, smooth sake described as onna-zake (feminine sake). Fushimi is Japan's second-largest sake production area after Nada.

Fushimi's soft water, filtered through layers of granite and gravel from the surrounding hills, has low mineral content that produces a slower, gentler fermentation. The resulting sake is characteristically smooth, round, and slightly sweet with delicate textures. Major Fushimi breweries include Gekkeikan (the world's largest sake producer), Kizakura, and Kinshi Masamune. The district's brewing history is intertwined with Kyoto's imperial and cultural heritage, and several breweries operate museums and tasting rooms open to visitors exploring this historic city.
