The apex of sake classification: pure rice sake with daiginjo-grade polishing to 50% or less and no added alcohol. Junmai daiginjo represents absolute purity combined with maximum refinement.

Junmai daiginjo is the most labor-intensive and expensive sake to produce. With no brewer's alcohol to enhance aroma extraction, the brewer must rely entirely on fermentation conditions and rice quality to create complexity. The best examples show remarkable depth behind their elegance, with layers of melon, pear, white flower, and a mineral-driven finish. Production volumes are small, and top bottlings from renowned kura command premium prices comparable to fine Burgundy.
