Developed exclusively for Yamagata Prefecture and registered in 1997, Dewa Sansan is the cornerstone of the DEWA33 appellation — Japan's first prefecture-wide sake quality designation requiring this rice polished to 55% or less. A cross of Miyama Nishiki and Hanafubuki, it produces elegant, balanced sakes with gentle aromatics and clean finishes.
