From Suishin Sake Brewing in Hiroshima Prefecture, this Junmai Ginjo is milled to 55% using Hattan Nishiki, a rice closely associated with Hiroshima brewing. Moderate fruity and floral notes sit atop a rice-inflected body, with an acidity of 1.3 and an amino-acid level of 1.15. A Sake Meter Value of +3 at 15.5% alcohol gives a dry, clean finish. Hiroshima is historically significant as a cradle of soft-water ginjo brewing, and Suishin ranks among its long-running breweries.
