Rihaku Shuzo in Matsue, Shimane is named after the Tang dynasty poet Li Bai (Rihaku in Japanese), legendary for his love of wine and poetry. The brewery produces rich, expressive sakes using Shimane's soft water and a mix of Yamada Nishiki and local rice. Their Wandering Poet series has become popular in Western markets for its approachable style.
