Freshly pressed sake, released shortly after pressing with minimal aging. Shiboritate is the sake equivalent of Beaujolais Nouveau — vibrant, youthful, and sometimes rough around the edges, available primarily from January through March.

Shiboritate is not a legal classification but a market term indicating recency. Most shiboritate is unpasteurized (nama) and undiluted (genshu), capturing the raw energy of the new vintage. The flavor profile is typically vivid and forward: bright acidity, intense fruit aromatics, sometimes yeasty freshness, and higher alcohol than standard sake. Shiboritate is extremely perishable and must be refrigerated. It represents the brewery's new vintage at its most immediate, before aging and pasteurization smooth its character. For enthusiasts, tasting shiboritate across multiple breweries each winter is an annual ritual of discovery.
