The concept that a sake's character reflects its specific place of origin — the local water, rice, climate, microorganisms, and human traditions. While borrowed from French wine culture, terroir has become an important framework for understanding regional sake differences.

Sake terroir manifests through several channels. Water hardness and mineral composition directly influence fermentation speed and flavor (compare Nada's hard water with Fushimi's soft water). Local rice varieties evolved to suit regional climates and contribute distinct flavor profiles. Even airborne wild yeast and bacteria in the brewery environment may contribute to house character. The Japanese concept of fuudo (風土, literally wind and soil) captures a similar idea. Increasingly, sake labels highlight prefecture, town, and even field-level origin, mirroring the transparency of fine wine.
