Made from Yamada Nishiki polished to 45% in Yamagata, it balances rich fruit aromatics with an elegant structure, reaching 15.5% ABV with a near-neutral sake meter value of +2 and a low acidity of 1.2. Its profile is strongly fruit- and floral-forward with a light sweetness, the fruit and floral notes dominating over a restrained sweetness. Dewazakura is widely credited with helping bring ginjo to a broader public through its earlier Oka expression, and Ichiro represents the most refined end of the brewery's range — the polished counterpart to that more accessible, everyday bottling.
