Named after the Great Snow Gorge of the Northern Alps, Daisekkei Shuzo in Ikeda draws water from the Takase River fed by 3,000-meter peaks. The brewery's crisp, clean sakes reflect the alpine purity of their water source. Their junmai and honjozo expressions are beloved locally and pair perfectly with Nagano's mountain cuisine.
