Nagano
Climat
Nagano's high-altitude location in the Japanese Alps produces some of Japan's coldest brewing temperatures outside Hokkaido, with clear mountain air and minimal humidity ideal for slow fermentation. Pure snowmelt from 3,000-meter peaks provides exceptionally soft water with low mineral content. Wide day-night temperature swings during rice-growing season concentrate sugars in locally developed Miyama Nishiki rice.
