The highest classification of ginjo-style sake, requiring rice polished to at least 50% of its original size. Daiginjo represents the pinnacle of the brewer's art, with exceptionally refined, aromatic, and complex flavors.

Daiginjo production demands extraordinary attention at every step. The highly polished rice is fragile and must be washed, soaked, and steamed with precision. Fermentation proceeds at very low temperatures over 30 or more days. The resulting sake exhibits an ethereal balance of fruit, floral notes, and delicate sweetness with a clean, lingering finish. Daiginjo is typically served chilled to preserve its nuanced aromatics. Many brewers enter their finest daiginjo into competitions like the Annual Japan Sake Awards.
